Beschreibung

Mapo tofu is a popular dish from Sichuan in China. The name “Mapo” translates to “grandma’s tofu,” referring to the pockmarked old woman who is said to have created the dish. Traditionally, Mapo tofu is made with soft tofu and minced beef, cooked in a rich,oily red sauce. The dish is boldly flavoured and known for its distinctive “mala” taste — a combination of heat and numbing spice — created by Sichuan peppercorns and fermented broad bean and chilli paste. It is typically served with steamed rice to balance the intense flavours. In this workshop, we will be preparing a vegetarian/vegan version of this classic dish. We will use plant-based alternatives while keeping the signature flavours and silky texture. The spice level will also be toned down, as traditional Mapo tofu is very spicy! Rani Bayat was born and raised in Britain to Indian parents, who grew up with dual heritage as well as having lived in a very diverse cultural environment. This exposure led her to be able to cook a variety of vegan and vegetarian cuisines and most importantly, “healthy and tasty”! Over the years, and throughout travel, Rani naturally progressed, creating fusion foods, cooking techniques, and developing layers of flavour. Rani is looking forward to sharing this very experience through creating these delicious cuisines especially in Thai and other Pan Asian cuisines.
